Tasty Black Bean Salsa

Get your fiber fix and a healthy dose of iron with this easy recipe:

* 2 - 15 oz cans of black beans (drained and rinsed)
* 1 small to medium jicama (peeled and chopped)
* 6 tbsp fresh Lime Juice
* 3 to 6 tbsp olive oil (as desired)
* 1 ½ tsp ground cumin
* ½ cup chopped red onion
* ¼ cup chopped fresh cilantro
* ½ tsp salt
* 1 cup peeled and seeded chopped tomato
* 1 tsp seeded and chopped fine jalapeño (use the whole jalapeño for extra spice)

Mix together everything except tomato. Cover and refrigerate over night. Add chopped tomato before serving. Serve with tortillas (for extra fiber use sprouted whole wheat tortillas) warmed in olive oil.

    Mmmm, made it yesterday and loved it. I skipped the lime though and replaced it with a lemon, and cut the salt (I can’t have any). Thanks for the tip!

    I saw this on Saturday, went grocery shopping this morning, and made this for my lunch today. And it tastes great! Plus I think it tastes even better when you know it’s healthy :-)

    I cut the salt too. I know it’s a little unhealthy anyway but I saw a TV show the other day about how much extra salt and sugar irresponsible companies use in foods they manufacture to increase their profits. Eye-opening stuff let me tell you.
